Suya/Kebab Wings

Hello, my lovely people. I am really trying to stick to my promise of posting more recipes. Today I am going to share a very simple wings recipe with you guys. I posted this a couple of times on my snapchat and had a few people ask for the recipe so here we go.

Ingredients

  •  1lb chicken wings
  • 1 tablespoon of seasoning salt
  • 1 teaspoon of black pepper
  • 1 teaspoon of red pepper(optional)
  • 1 small onion(chopped)
  • 1 teaspoon of parsley flakes
  • 1 teaspoon of red pepper flakes(optional)
  • 1 cup of oil(for frying)
  • 1/3  - 1/2 cup of suya/kebab powder


Method: 




  1. Wash and clean the wings well removing any sight of hair that maybe on the wings
  2. Season wings with all ingredients except the suya/kebab powder and oil, let the chicken marinate in the fridge for 30mins to an hour(overnight if you have the time to spare)
  3. Add the oil in a medium frying pan, on medium heat, fry the wings until well done(they should be golden brown in color and shrunk from its original size)
  4. In a medium saucepan, spray a little bit of cooking spray or 1/4 teaspoon of oil, add the fried wings and pour in the suya/kebab powder. 
  5. Stir the wings until all parts of the wings are covered with the powder
  6. Serve as an appetizer or with jollof, fried rice, fried yam, etc
**This recipe is using the frying method but you can bake it if that is what you want. After baking just add the suya/kebab powder**

Peppered Gizzards


So this recipe has been a long time coming, I keep procrastinating and I apologize for that. I made these at one of my at home dinners and they quickly became a hit. PS: this is a VERY spicy dish so if you can't tolerate spicy meals, I beg this is not for you. Haha. Well I hope you like it when you try it. 
  • 2 trays of gizzards(that's how they were sold when I got them, about 1/2 a pound)
  • 2-3 scotch bonnet peppers(depends on how spicy you want it)
  • 1/2 ginger
  • 2 garlic
  • 1/2 onion 
  • 1 teaspoon powdered red pepper(depends on your spicy tolerance)
  • 1 teaspoon red pepper flakes
  • 1 tablespoon seasoning salt 
  • 1 teaspoon black pepper 
  • 1 tablespoon oil 
  • Oil for frying 


1) Wash the gizzards well, steam(precook) it, then add all powdered spices with the exception of red pepper flakes .....allow it to steam for awhile 
2) Heat up some oil on medium heat and deep fry the gizzards until it's dark brown
3)While gizzards are frying, blend ginger,onion, scotch bonnet peppers and garlic with 1 small cube of knorr and 1 teaspoon of seasoning salt
4)In a small sauce pan, add the tablespoon of oil and the blended spices and stir until the sauce almost thickens up, add in the fried gizzards and red pepper flakes and stir it all together until all the gizzards is coated in the sauce. 
5) Serve as an appetizer, side dish or whatever is preferred, everytime I made this there were people consuming alcohol so it worked for them

Plantain chips


I love plantain chips no it's very serious, everytime someone is coming from Ghana I ask for plantain chips lol so the craving got real and I decided to do it myself. It's not like they sell in Ghana but it's pretty darn close lol!

Ingredients:

  • 2 green or yellow plantain(depending on what you prefer)
  • 1 tablespoon salt (less if you don't want it overly salty)
  • Oil for frying 

Method 

  1. Peel and wash plantains. Cut into very thin slices the shape is your choice but make sure you cut it as thin as possible(that gives you the crunchy-ness of plantain chips). You can also use a potato peeler to slice the plantain into thin slices. 
  2. I soaked mine in salt water for 15 mins before frying(you can choose to skip this part and just add salt after frying), heat up oil on medium heat and fry until its golden yellow.(see pictures for guidance)..

Theedee's barbecue chicken wings

My little cousin turned 8 in feb(I know I am so late with this post) and I made these chicken wings for his party. One thing I know from babysitting so many kids in the past is that they love bbq chicken. So that's why I decided to do it. I mixed 2 different sauces for this.

Ingredients:
  • 1 bag of chicken wings (usually has about 30 wings in there)
  • 1 medium sized bottle original barbecue sauce
  • 1 medium sized bottle honey barbecue sauce
  • 2 tablespoons seasoning salt
  • 2 tablespoons black pepper
  • 1 tablespoon ginger powder
  • 1 tablespoon cayenne pepper(optional)
  • 1 tablespoon thyme
PS: You can make this as spicy as you want, I didn't make this spicy at all because I knew I was cooking for children and 90% of them don't like spicy food lol. 
Method:
  1. Wash chicken wings(if you have the kind of chicken wings that has the feathers on them please becareful and remove them all before seasoning)
  2. After washing, season with pepper,thyme,seasoning salt, then pour a combination of both honey barbecue and original barbecue sauce on it. Allow it to marinate overnight in the fridge,if you don't have that much time let it marinate in the fridge for an hour or 2
  3. Preheat your oven at 370 degrees F(188 degrees C), in a greased baking pan pour out the seasoned chicken, add more of the barbecue sauce to it and bake for 30 mins, add the remaining of the sauces and bake for an additional 15mins. (It's easy for bbq chicken to burn so you can reduce the temperature of your oven if you think its too high)

Suya

Let's not get this confused with khebabs lol. Suya is what Nigerians call this. I tried this when I visited one of my favorite Nigerian restaurants in New York and I fell in love. I ordered this spice from Essiespice called Meko dry and I used it instead of suya spice wanted to try something new and I am glad I did. 



Ingredients:
  • 2lbs of beef(with little to no fat at all)
  • Suya Spice(or Essiespice meko dry)
  • Peanut Oil (if not, then Vegetable Oil will do but peanut is ideal)
  • 1 tablespoon salt
Method:


  1. Cut the beef into very thin fillets.
  2. Put some peanut oil in a bowl, add the salt and stir it 
  3. Using a cooking brush, rub peanut oil on the fillets of beef. (This helps the Suya spice stick to the meat so make sure you do not leave out any part of the meat.)
  4. In a baking sheet, spread the Suya spice and dab the fillets of beef in the spice making sure that the beef takes as much of the spice .When you are done with the dabbing, all the beef should covered with the suya spice
  5. Place all the spiced beef in a plate, cover it(with a clean film preferably) and leave it to marinate for about an 1 hour.Once the beef has marinated, preheat oven at 350°F or 177°C(If you will be using a grill the settings should be at  about 300°F or  150°C)
  6. Place the beef flat on the oven rack(you can place foil on the oven rack and poke some holes in it if you don't want to make your rack dirty lol) and put in the oven to grill.After 15 - 20 minutes, flip the beef to grill the other side as well.  Rub some of the remaining peanut oil on both sides of the beef. Increase the temperature a little bit(not too high) and grill both sides of the beef for 5 minutes each.

Method:
Ps: The length of time you'll roast each side of the beef depends on how thick the fillets are. So the total grilling time for the beef is 30 - 40 minutes.

Fish "balls" via Mukasechic

As usual I was on a hunt for new recipes to keep me busy & I stumbled on my fellow Ghanaian lady's blog called Mukasechic(Mukase means Kitchen for those wondering)....I saw this recipe & decided to try it out.....I found another appetizer option! Thanks to Ms. Jay....check out her blog ---> Mukasechic

Ingredients:


  • 1 whole fish ( cut into 3 pieces) or you can buy fillet fish if you don't want the whole fish shenanigans (lol)
  • 1/3 cup milk
  • 2-3 potatoes 
  • 2 teaspoons of butter
  • 1 teaspoon of olive oil
  • 1 teaspoon of seasoning salt (as always I used lawry's seasoning salt)
  • 1/3 teaspoon of cayenne pepper
  • 1/2 teaspoon of white pepper/black pepper
  • 2 eggs
  • 1 cup of flour
  • 1 cup of breadcrumbs (you might need more when you start coating the balls)
  • 1 small onion
Ps: if you are not a spicy food person you can decrease the amount of pepper.


Method:
  1. Soak your fish in the milk for 5 minutes, then steam it, when its steamed, flake it with a fork and set it aside. Peel and wash your potatoes, boil it for about 20 minutes
  2. The milk that you soaked your fish in, use that and 1 teaspoon of butter to mash your boiled potatoes, when the potatoes are all mashed, set it aside
  3. Chop the onions, and sauté  with 1 teaspoon of olive oil and 1 teaspoon of butter
  4. In one big bowl, mix your flaked fish,mashed potatoes,sautéed onions, seasoning salt and pepper, when completed mixed, take a tablespoon full and roll into an shape of your choice, I chose to go with balls hence the name "fish balls"......after the balls are made roll in in some flour, the eggs and finally coat with breadcrumbs
  5. Fry until its golden brown, ENJOY!!

Buffalo Chicken Wings (Sorta Kinda LOL)

I came home from being away for soooo long and found some left over chicken wings in the freezer(YAY!!!).....so what does a foodie like me do?.....try something new of course lol.....There were roughly 22 chicken wings left so I used all lol.
 PS: the chicken wings shrink :( they become so tiny when they are ready!!! lol

Ingredients:

  • 22 chicken wings
  • 3/4 cup of flour
  • 1/2 teaspoon thyme
  • 1/2 teaspoon parsley flakes
  • 1/2 garlic powder
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper
  • 1/2 cup butter (1 stick)
  • 1/2 cup hot sauce
Method:
  1. Wash and dry out your chicken wings on a paper towel(because you don't want them to be soggy when you coat them)
  2. In a baking sheet, spread out some foil, and grease it (set it aside)
  3. In a large bowl,mix your flour and spices, then add your chicken wings in at least 4 at a time, make sure the wings are evenly coated. Put the wings in the greased baking sheet and put it in your fridge for about 45mins- 1hr (marinating) 
  4. Pre-heat the oven to 375 degrees F (190 degrees C)
  5. Melt your butter, mix it with the hot sauce and coat the wings making sure that they are evenly coated. Put them back on the greased sheet that they were on (you can make a new clean greased pan, if you want)
  6. Bake for 45 minutes or until its golden brown. (See pictures below)
PS: The more chicken wings you have, the more ingredients you should use. If you want it to be really spicy increase the amount of hot sauce and cayenne pepper. ENJOY. :-D
