Quick Indomie "Stir Fry"

I realized today that I really need to go grocery shopping when all I had in the fridge/freezer were these few ingredients. I needed to make lunch for work so I just put everything together then BAM! delicious lunch for one. LOL. I never really understood the obsession with folks and indomie in Ghana until it became my go-to easy peasy dish when I really don't feel like over-cooking.

Ingredients:
  • 1 pack of indomie (I used the chicken flavor
  • 1/2 cup of shrimps(all I had)
  • 1 egg
  • 2 bell peppers
  • 1/2 teaspoon black pepper(optional)
  • 1/2 teaspoon seasoning salt(I don't eat much salt)
  • Cooking spray



Method: 

  1. Follow the steps on the indomie on how to cook it, basically bring hot water to boil then drop in the noodles. (I didn't cook mine with a lot of water simply because I knew I will be transferring it into the frying pan after)
  2. Chop bell peppers, wash and season shrimps
  3. On medium heat, spray a frying pan(non stick will be ideal) with some cooking oil, once it is hot,fry your shrimps until its well done, set aside
  4. Check on your noodles, once its soft and ready, set it aside
  5. Beat eggs and scramble until well done, then add in the shrimps and bell peppers,stir for awhile then transfer your noodles in, continue stirring add in seasoning salt and black pepper(if you choose it)
  6. Enjoy

Lean Beef stir fry(I guess...lol)

My mom decided that we have to start eating healthier this year so I've been trying out some recipes on my own. Just because I'm eating healthy doesn't mean it has to be boring lol

Ingredients:

  • 1 or 2lbs of lean beef
  • 1 medium onion
  • 1 green or red pepper (or both)
  • 1 and 1/2 tablespoon of coconut oil
  • 1 tablespoon seasoning salt
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper
  • 1/2 jalepeno pepper

Method:
  1. Wash meat, there should be little to no fat on this, but if there is, make sure you remove all of it, season meat with spices
  2. Chop your vegetables(look at the pictures below to see what size I had mine)
  3. In a large sauce pan pour your coconut oil and allow it to melt, then add in your meat and allow it to cook, after 20 minutes the meat should be all cooked and no longer pink, add in your vegetables. Let it cook for about 5-10 minutes, the stir fry should be ready by now. (You can season to your taste, if you prefer it more salty or less spicy)
PS: If you want this saucy(with some sauce), add 1/2 teaspoon of flour to 1/2 cup of water and add it to the meat, let it cook for 5 mins or until it thickens

Curry Shrimp

I love shrimp, fried, grilled, boiled no matter how it is cooked, I just love shrimp lol BUT curry shrimp has to be one of my absolute favorites.

Ingredients:

  • 2 pounds of peeled and deveined shrimp
  • 2 tablespoons of butter
  • 2 tablespoons of curry powder
  • 2 stalks of scallion(also known as spring onions)
  • 2 onions
  • 1 tomato(optional)
  • 1 scotch bonnet pepper(Jamaican hot pepper)
  • 1 teaspoon of cornstarch(if none, flour can be used...this thickens the sauce)
  • 1/2 sweet green pepper 
  • 1/2 sweet red or yellow bell pepper
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
Ps: You don't have to use all these bell peppers. They are optional, I used them because i love them :-).
    Method:
    1. Chop onions,scallions, peppers, tomato and garlic
    2. Mix the shrimp in one bowl with one tablespoon of curry powder
    3. Melt the butter in a sauce pan, add the other tablespoon of curry powder, fry for about a minute
    4. Add the chopped vegetables, fry for about 2 minutes
    5. Add the shrimps and let it simmer for about 5 minutes
    6. Add water and cornstarch(flour) and let it cook for another 5-10 minutes
    7. Enjoy with white rice, rice and peas, jollof or fried rice. :-)
